Carver Road Hospitality Sets Sail for New England: Seamark Seafood & Cocktails to Open at Encore Boston Harbor

Carver Road Hospitality, a multifaceted player in the hospitality industry specializing in investment, development, operation, and marketing of upscale hospitality ventures, is poised for its first foray into New England. On April 12, 2024, Seamark Seafood & Cocktails will unveil its doors at Encore Boston Harbor, the region’s esteemed luxury resort and casino. Seamark reimagines the classic New England seafood dining experience with a contemporary twist, marrying tradition with innovation, all underscored by Carver Road Hospitality’s hallmark commitment to exceptional service and culinary mastery.

Overseeing Seamark’s culinary realm is the esteemed James Beard award-winning Chef Michael Schlow, who will spearhead a menu celebrating elevated New England seafood, embracing a distinctive pier-to-plate ethos. Schlow, in collaboration with the culinary team, will craft a repertoire of signature seafood-centric dishes that pay homage to the abundant coastal offerings of New England, appealing to the diverse palates of Encore Boston Harbor’s guests.

In the realm of libations, Seamark’s beverage program curated by Carver Road Hospitality’s Vice President of Beverage & Hospitality Culture, Francesco Lafranconi, delves into the rich tapestry of New England’s maritime history. Offering an array of beer, wine, and an enticing selection of classic and bespoke cocktails, guests can embark on a sensory journey across oceans, exploring flavors and spirits from distant ports of call.

Designed by the acclaimed architecture and design firm The Rockwell Group, Seamark’s ambiance is a fusion of chic sophistication and nautical charm. Nestled adjacent to the resort’s picturesque Garden Lobby and overlooking the captivating ferris wheel, the restaurant exudes a welcoming allure. The space, adorned in hues of blue interspersed with whites and creams, evokes the serenity of coastal living.

A hidden gem within Seamark, the clandestine speakeasy, Old Wives’ Tale, invites guests to indulge in a clandestine experience. Featuring a bespoke menu of culinary delights and libations alongside intriguing artifacts, the speakeasy offers an immersive journey into the mystique of the sea.

Guiding Seamark’s front-of-house operations is industry veteran Evan Lopez, assuming the role of General Manager. Drawing upon his wealth of experience, Lopez and his team are dedicated to delivering a premier level of hospitality, infusing each guest’s visit with personalized touches and impeccable service synonymous with the renowned hospitality of Vegas.

“Seamark is not only an important expansion for Carver Road Hospitality but it’s also very personal for me,” says Carver Road Hospitality co-founder and Chief Executive Officer Sean Christie. “As a Boston native, I got my start and worked in the food and beverage industry in the area for years before moving to Las Vegas. And, during my time as a Wynn executive, I saw the Encore Boston Harbor site secured and watched the property develop and evolve, so it’s all come full circle,” says Christie.
