CARVERSTEAK GIVES DINERS A RARE EXPERIENCE IN LAS VEGAS

There are many magnificent steakhouse experiences on the Las Vegas Strip, but Carversteak, one of the newest kids on the block, has carved out a niche already with its mix of spacious, welcoming design, some truly next-level lighting effects, a world-class cocktail program and, of course, some of the best surf and turf you’ll find anywhere.

The cocktail menu, courtesy of master mixologist Francesco Lafranconi, is a wonderland of different spirits and flavors. Highlights include the Smoked ‘N Spiced, a tableside presentation complete with a maple wood smoke-filled container to give your mixture of Michter’s US 1 single barrel rye, St. George spiced pear liqueur, M&R Ambrato vermouth and bitters a nice, extra-smoky touch. Tequila fans will want to try the Calabazarita, featuring El Tequileño reposado, house-made pumpkin-agave syrup, lime and sage-infused Cointreau, all finished off with pumpkin pie spices salt.

The fun continues on the dinner menu, with imaginative starters such as bacon onion bread and caviar poppers. Meat lovers have got to try the wagyu cheesesteak bites, with aged provolone mornay and truffle providing a significant flavor boost to the classic.

Now to that surf and turf! You can go full bore with seafood delights like lobster en croute, made with two pounds of Maine lobster wrapped in puff pastry and drizzled with lobster-cognac cream, or mizo-glazed black cod served with baby bok choy. 

But really, don’t you want a steak while you’re here as well? You’ll agree, especially when you see the selection of different prestigious purveyors like Chicago-based Allen Brothers (filet mignon and bone-in filet), Flannery Beef (Kansas City, aged 28 days), and Western Reserve (Strip loin, 21 days wet-aged). Make sure to try at least one of the sauces—we’re partial to Point Reyes Blue, but peppercorn, hollandaise and Bearnaise are all terrific as well. No matter your main course, make sure to choose a couple of sides for maximum enjoyment. The crispy hot honey Brussels sprouts are a revelation (you’ve never tasted a version like before, trust us), and beer-battered onion rings and mac and cheese gratin are both solid, comforting choices.
